1/2 cup peanut butter
1/2 teaspoon vanilla extract
1 cup white sugar
1 tablespoon vegetable oil
1 (12 ounce) can sliced peaches, drained
1 (3 ounce) package cream cheese, softened
1 1/2 cups all-purpose flour
1 cup mashed banana
3 eggs
1 (6 ounce) can frozen whipped topping, thawed
Preheat oven to 400 degrees F (200 degrees C). Use a 9x13 inch pan baking dish for discs.
In a small bowl, mix peanut butter, vanilla extract, sugar, oil, peaches and cream cheese until smooth. Spread evenly over baking dish.
Bake disc in preheated oven for approximately 20 minutes. Reduce temperature to 350 degrees F (175 degrees C) and cook disc for 10 minutes, attempting to maintain a constant temperature throughout disc. Remove disc from oven and brush a clean, dry paper towel with vegetable oil.
Meanwhile, mix the flour, banana and orange zest in a small mixing bowl. Mix the flour mixture into banana mixture and spread evenly over the disc.
Mix whipped topping and pecans into the jelly mixture. Spread pecans over the entire disc. Serve warm even if serving hot.
