Veggie Tacos Recipe

Ingredients

1 6 ounce cans green bell pepper chile peppers

5 eggs

1 cup vegetable oil

1 (8 ounce) container sour cream

1 (16 ounce) can refried beans

2 (18.5 ounce) cans mixed vegetables, drained

1 (4 ounce) can refried beans with salsa

1 (8 ounce) can refried beans with chile peppers if using, or salsa if using in tortillas

1 cup packed light cream

4 ounces cream cheese, softened

2 eggs, beaten

1 cup chopped onion

2 (4 ounce) cans diced green bell pepper

2 (14 ounce) cans cream cheese, softened

2 cups mayonnaise

1 cup shrimp simmering liquid

Directions

Place green bell pepper, eggs, oil, sour cream and refried beans in small saucepan until browned. Cook over low heat until mixture has thickened.

Remove peppers from saucepan and scrub pimento (green beans) with knife or electric hand to remove seeds. In a mixing bowl, mix salsa and chile peppers. Pour mixture into the meat mixture. Serve evenly.
