Pineapple Variations Bread Recipe

Ingredients

3 cups all-purpose flour

1 cup packed brown sugar

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

2 teaspoons ground nutmeg

1/4 teaspoon ground cloves

1 teaspoon dried currants

1 1/2 teaspoons dried currants, finely crushed

1 cup chopped pecans

1 cup cooked white sugar

1 teaspoon ground cinnamon

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x5 inch loaf pan.

Prepare sugar according to package directions. Mix brown sugar and baking soda. Set aside.

In a large bowl, combine flour with baking soda, salt, cinnamon, nutmeg, cloves and currants. Stir in pecans and sugar. Fold in cinnamon and pecans. Spread mixture into prepared loaf pan. Spread with remaining brown sugar.

Bake on 35 5 inch buns for 2 hours, until a toothpick inserted in middle comes out clean. Cool completely. Cut into squares.

I have made this several times but always add flour to try and pull apart. Mine turned out dry. Thank you for the recipe.
