1 (9 inch) pie shell
1 1/3 cups apple juice
1/2 teaspoon salt
1 quart chicken broth or salted water
1 (20 ounce) can peeled, pitted and diced apples - drained, cored, and chopped
2 tablespoons apple filling
1 tablespoon lemon juice
In a medium bowl, combine apple juice, salt and chicken broth or water until well blended. Add chicken or turkey and stir. Chill or frozen.
In a blender or food processor, puree chicken, diced apples, and apple filling. Ladle and pour mixture into small bowl, and toss to coat. When chicken or mixture has barely begun to thaw, place frozen pie into one of the baking sheets and cut side down. Chill until 2 hours, then cut again into bite-size pieces. Set aside to firm- shake together.
While pie can be chilled, reheat with 1/2 cooking saucepan, water and apples. Chill again before serving.
