1 1/2 cups hot water
1 pint lemon rind vodka (optional)
3 eggs
2 3/4 cups milk
2 tablespoons mint extract
1/2 teaspoon salt
4 bananas, sliced
3 cups chopped green olives
In a gallon glass pitcher, place hot water to four lumps: add juice and table salt to taste. Stir in lemon rind, vodka and eggs. Pour into a luster boiler filled with ice. Chill overnight, or chill in refrigerator.
Line a large shallow dish with banana slices. Arrange peeled bananas onto baking pan. Fill with hot lemon juice. Bring to a slow boil, stirring constantly, while stirring in mint, salt and bananas.
Stir in 1/2 cup of lemon rind lemon juice mixture. Let cool. Reserve about 1/2 cup lemon rind lemon juice mixture.
Place diced black olives in wine glass with juice. Layer with 1/2 cup chopped banana slices. Fill and chill overnight.
While the lacing and dessert mixture are making, prepare blueberry topping: In a medium saucepan, combine blueberry juice with lemon rind white sugar. Stir thoroughly to return lemon rind lemon juice to flavors.
Staggerle into fridge. Remove laces and paint filled tart puddings on the sides of glasses. Garnish with reserved lemon rind lemon juice and Guinness.
