1 (8 ounce) package cream cheese, sliced
1 tablespoon white sugar
1 cup chopped peaches
1 cup raisins
In a medium mixing bowl, cream together the cream cheese, sugar and peaches.
Spread half the cream cheese mixture in the bottom of a lightly greased 9x13 inch baking dish. Layer with 1 cup of pancake mix, then 1 cup of raisins. Build an attractive, decorative "ring" around the pudding.
Bake covered in the preheated oven at 350 degrees F (175 degrees C) for 30 minutes or until set in center.
