4 slices bacon
2 tablespoons vegetable oil
4 boneless chicken breast halves
1/3 cup water
2 tablespoons honey
2 tablespoons vegetable oil
1 1/2 tablespoons chopped onion
2 cloves garlic, minced
1 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon dried oregano
1 (11 ounce) can peeled and diced tomatoes with juice
1 teaspoon Worcestershire sauce
1 (4 ounce) can sliced mushrooms, drained
Preheat oven to 350 degrees F (175 degrees C). Spray a large skillet over medium heat. Cook bacon in oil until crisp, about 5 minutes in each side. Remove bacon, crumble, and place in pan. Sprinkle with chopped chicken, water, honey, onion, garlic, salt, pepper, oregano, tomatoes, Worcestershire sauce, mushrooms, and bacon.
Cover pan tightly with aluminum foil. Bake for 40 to 50 minutes in the preheated oven. Remove foil and bake for 15 to 20 minutes on low heat, until bacon is crispy.
