Coconut Cream Pie VIII Recipe

Ingredients

4 eggs

1/2 tablespoon vegetable oil

1/3 cup white sugar

1 teaspoon vanilla extract

1 (3 ounce) can crushed pineapple with juice

1 teaspoon vanilla extract

1 teaspoon instant lemon zest

3/4 cup milk

2 tablespoons butter, melted

1/2 cup butter, softened

1 egg

1 cup flaked coconut

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round baking dishes.

In a large bowl, beat eggs until frothy. Stir in oil, sugar and vanilla. Stir in pineapple, lemon zest and milk.

Pour egg mixture into prepared pan. Sprinkle remaining ingredients over pineapple, cover and bake in preheated oven for 1 hour.
