1/2 cup rice vinegar
1/2 cup water
1/2 teaspoon salt
1 tablespoon orange juice
1 teaspoon fresh lemon juice
1 (4 ounce) can frozen orange juice concentrate, thawed
1 (4 ounce) can pineapple chunks, defrosted
1 (6 ounce) can sweetened orange juice concentrate
1/4 cup lemon zest
1 teaspoon white sugar
1/4 teaspoon orange zest
1/8 teaspoon cayenne pepper
1/4 teaspoon coarse salt
1/4 teaspoon crushed red pepper flakes
1 tablespoon olive oil
1 teaspoon white sugar
1/8 teaspoon grated lemon zest
In a mixing bowl, pour vinegar into a saucepan. Bring to a boil and boil for 15 minutes. Remove from heat and add water, salt, orange juice concentrate, pineapple chunks and orange juice concentrate. Mix well and stir in orange juice concentrate.
Stir butter into pineapple mixture, along with lime zest and sugar. Mix well and pour into a small bowl.
