1 cup brown sugar
1/2 cup butter, softened
3/4 cup all-purpose flour
1 cup white sugar
1 teaspoon baking powder
1 cup rolled oats
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 tablespoon baking powder
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together the brown sugar, 1/4 cup butter, and 3/4 cup flour until smooth. Beat in the flour until well blended. Mix in the oats, then the vanilla. Stir in the sugar, another 1/2 cup by the end of the dough. Roll the dough into walnut sized balls; place 1 inch apart onto the cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until edges are golden. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
I used the baking cocoa, also great on cookies!!
Some cookies didn't set the way they should have and that's after I gone through 10 writes on the baking sheet. Behd put it in the freezer and thawed it a lot sooner than the recipe called for so it baked more naturally. There aren't enough cookies to go round so I'm probably going to eat half the batch I baked and make half again as much cake for the whole dinner.
