2 tablespoons olive oil
1 pound ground beef
1 onion, grated
1/2 cup chopped green bell peppers
1 cup diced green bell pepper
6 cloves garlic, minced
1 teaspoon hominy
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried minced onion
1 teaspoon dried rosemary
1 teaspoon crushed red pepper flakes
1 teaspoon salt
2 cups mozzarella cheese
3 eggs
3/4 cup crushed cherry tomatoes
Heat olive oil in a large skillet over high heat. Fry hamburger, onion and green peppers in olive oil about 5 minutes on each side, or until browned. Drain excess oil and stir in garlic, hominy and oregano. Mix together with garlic, salt, mozzarella cheese and eggs. Roll & place in the skillet. Reduce heat to low, spread on wedges. Season with crushed tomato. Reduce heat to high, and stir in grounds for seasoning.
Bake uncovered in preheated 375 degrees F (190 degrees C) oven for 45 minutes, or until lightly browned. Top with red pepper flakes and sliced cherry tomatoes and serve.
