1/2 cup olive oil
1 pound processed cheese
2 eggs
1 teaspoon lemon juice
2 cups white sugar
2 teaspoons vanilla extract
1 teaspoon lemon zest
Place olive oil in a large saucepan over medium heat. Add cheese, eggs, lemon juice, sugar, and vanilla extract. Mix gently until well blended. Stir in lemon zest.
Return the saucepan to heat and add lemon currant liqueur. Bring to a boil, then reduce heat to medium; simmer for 5 minutes. Stir the butter or margarine mixture into the saucepan, then pour into the saucepan until melted. Bring to a boil, stirring constantly, then remove from heat. Pour the brittle mixture into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes, or until bubbly. Cool completely before cutting into squares.
