2 cups raw cashews
1/2 pound bacon, chopped
3/4 cup flaked coconut
1 teaspoon salt
1 1/2 cups coarse raisins
1 tablespoon chopped dates
1 (15 ounce) can crushed pineapple with juice
1 (8 ounce) container frozen whipped topping; thawed
In a medium nonporous casserole dish, combine cashews, bacon, coconut, and salt. Mix well and saute over medium-low heat for 10 minutes. Remove from heat and stir in raisins and dates, mixing just until sugar is dissolved. Freeze for 1 or 2 hours.
To serve: In a large bowl combine the chilled fruit mixture with frozen whipped topping, only a few at a time. Fold all into the pie crust, covering completely.
