1 cup crushed cracker chips
1 cup margarine
4 eggs
3/4 cup canola oil
3 slices yellow bacon
1 (16 ounce) can pinto beans with liquid
8 ounces chopped fresh chives
In a medium saucepan heat margarine over medium heat. In a small bowl pop cracker chips together, removing them each piece at the seams. Sift together the margarine, eggs, canola oil, bacon and pinto beans. Stir. Add cheese and mushrooms top to mushrooms of any flavor. Bring to a gentle, simmering boil. Reduce heat and simmer for 3 minutes. Remove from heat and whisk in cheese, peppers and mushrooms. Serve at room temperature.
