Coconut Cream Pie II Recipe

Ingredients

1 3/4 cups butter, softened

1/2 cup brown sugar

1/3 cup white sugar

1 tablespoon vanilla extract

1 egg

1 tablespoon milk

1 cup chopped pecans

1 1/2 cups all-purpose flour

1 cup all-purpose flour

3/4 cup chopped pecans

1/2 teaspoon salt

1 teaspoon ground cinnamon

Directions

Preheat oven to 350 degrees F (175 degrees C).

To Make Crust: Melt butter or margarine in medium saucepan over medium heat. Add brown sugar, stirring constantly, until mixture is smooth and creamy. Remove from heat. Add vanilla extract, egg, milk, pecans and flour. Mix thoroughly.

To Make Filling: In a medium bowl, mix together 1 cup flour, 1 cup flour, chopped pecans, salt, cinnamon and salt. Pour mixture into crust.

Bake in preheated oven for 30 minutes, or until bubbly and golden brown. Cool completely.

I used Tilapia as I am not a trout fan/it was bugging me how to prepare it. My first attempt was to cover the outside edge of the cooked filets with foil. This didn't work and would have made for an ok starter. I tried adding thyme garlic but to no avail. Anyways, will try adding some garlic powder next time. Thank you for the recipe.
