1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 cup milk
1/2 cup chopped onion
1 cup chopped celery
1 cup chopped green bell pepper
2 eggs
1 cup butter, softened
1 cup all-purpose flour
1 teaspoon ground nutmeg
3 tablespoons brown sugar
1 teaspoon vanilla extract
1 cup shredded coconut
1 (10 ounce) package frozen mixed noodles
1 (8 ounce) can sliced coconut
Preheat oven to 350 degrees F (175 degrees C). Grease 8x8 inch baking pan or 9x9 inch baking pan.
In a medium bowl, mix the baking powder, salt, pepper, milk, onion, celery and green pepper. Mix well.
In a large skillet, fry the onions and celery until no longer pink. Remove from the pan and set aside.
In a small bowl, mix the eggs and butter. Mix thoroughly. Mix the flour, nutmeg and brown sugar. Stir into the milk mixture. Mix in the egg mixture until well blended. Stir in the coconut. Pour the mixture into the prepared pan.
Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Remove from the oven and allow to cool completely.
