1/2 cup butter
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 teaspoon lemon zest
1 (10 ounce) can refrigerated grape jelly
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round pans.
In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg, one at a time, then stir in lemon juice, vanilla extract and lemon zest. Beat in grape jelly. Pour mixture into prepared pans.
Bake in preheated oven for about 1 hour, or until a toothpick inserted into center of the cake comes out clean. Cool completely in pan.
