1 medium peach, peeled and segmented
1/2 cup orange juice
1 1/2 cups apricot preserves
1/4 cup sliced almonds
6 slices bacon
1/3 cup butter
1/4 cup granulated sugar
1 cup shredded coconut
1 teaspoon vanilla extract
3 slices bacon
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
Lightly grease a large platter. Secure peaches with a fork and reserve an entire peach section for one or more guests. Peel peaches and slice into numerous wedges. Place on the platter and refrigerate 4 hours, allowing the peaches to set.
In a blender or food processor, blend peach preserves, almonds, bacon, butter, granulated sugar, coconut, vanilla extract, bacon and garlic powder. Chill peach section until serving, and remove peaches from freezer.
