1/4 cup butter
1 cup white sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 1/2 cups honey roasted peanuts
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, sugar, egg and vanilla until smooth. Beat in the flour, baking powder, baking soda, baking powder and salt; stir into the creamed mixture alternately with the peanuts. Drop by rounded spoonfuls onto the cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
