2 tablespoons vegetable oil
1/2 cup kosher salt
1/2 cup white sugar
1/2 teaspoon garlic powder
1 teaspoon dried parsley
2 tablespoons dried oregano
2 green onions, finely chopped
3/4 cup chopped fresh parsley
Heat oil in a large saucepan over medium heat. Add salt, sugar and garlic powder; stir together. Cover, reduce heat and simmer 5 minutes. Stir in parsley and oregano; cook 10 to 15 minutes, stirring. Remove from heat; stir in parsley mixture, oregano, parsley salt and pepper. Heat to desired consistency with metal spatula.
Heat oven to 375 degrees F (190 degrees C).
Remove ham and parsley from oven and place in separate large baking pans; drizzle with remaining olive oil, garlic salt, sugar and garlic powder. Place parsley mixture over ham, spooning thickly with paring spoon. Bake uncovered 60 minutes, stirring about every 5 minutes.
Remove ham from oven and spoon paring sauce over ham. Bake uncovered 20 minutes, stirring about every 6 minutes. Remove ham from oven and spoon mixture over ham. Bake uncovered 5 minutes, stirring occasionally. Remove covered ham and sprinkle paring sauce over, covering all sides. Place on rack and cool slightly.
Arrange green onions and parsley over ham and basting slightly. Spoon paring sauce over ham and green onions. Bake uncovered 15 minutes, stirring about every 5 minutes. Remove ham from oven and spoon paring sauce over ham. Bake uncovered 45 minutes, stirring occasionally. Serve over pasta dishes 2-4 minutes before serving.
