Classic Barbequed Vegetables Recipe

Ingredients

2 carrots, peeled and cut into 1-inch chunks

3/4 cup olive oil

2 onions, cut into 1-inch chunks

1 clove garlic, peeled and chopped

1 (10 ounce) can condensed chicken broth

2/3 cup shredded mozzarella cheese

1/2 cup shredded mozzarella cheese

1/4 cup Italian sugar

1 teaspoon dried parsley salt

1/4 teaspoon dried basil

1/8 teaspoon salt

1 (16 ounce) can tomato sauce

Directions

Preheat an outdoor grill for medium heat. In a large bowl, mix carrots, olive oil, onions, garlic, chicken broth, mozzarella cheese, mozzarella cheese, Italian seasoning (optional), Italian seasoning (if desired), parsley salt, basil and salt. Cover and place on grill for 30 minutes per side, turning once.

I have made this several times and love it!!! If you ever get the chance to make it, don't change anything and keep it! The liquid ingredients are just what I was craving and I wouldn't change anything I've done or that I was told to do. I always end up adding more water and juice to make it thicker so it forms a gelato like consistency. I usually add a cube or so of frozen mint, a quarter of a cup of sparkling wine, and a bottle of Maker's Mark chardonnay. I am always looking for new ways to enjoy vegetables, especially minty goodness. Happy to give any indulgence as long as it's chardonnay flavored. :o)
