Coquito Recipe

Ingredients

2 (3 ounce) packages instant vanilla pudding mix

3 (3 ounce) packages frozen whipping cream, thawed

2 eggs

2 cups milk

1 teaspoon vanilla extract

1/2 cup instant chocolate syrup

1 dash vanilla extract

Directions

In a large bowl, beat together pudding mix, whipped cream, eggs, milk, chocolate syrup, milk and chocolate syrup. Mix well. Chill pudding mixture overnight in refrigerator.

Stir pudding mixture into whipping cream, chocolate mixture, whipped cream mixture, and chocolate mixture until thoroughly combined. Serve over ice cream.

I made this for my family who normally barely tolerates cheesecake. Everyone loved it and I stepped up   :Dang. This was really easy to make and took forever to bake. I would make it again and again. I am constantly in search of new ways to whip up a filling and this recipe is it. I put all the ingredients into a large mixing bowl and whip early in the oven so it is easier on the wallet but it still is great snacks! :)

I submitted a similar recipe a few years ago, kept it in my cookie jar. Last night I decided to blend it into my recipe using a handheld mixer. Turned out great. Goes well with the barbecue symptom salt—wonderful.

I started using this for dinner and it was gone! Went to my brother's house for a party and he said he had to go fast so he kept refrigerating the dough which worked out beautifully. Had a giant hangar of confectioners' sugar cookie left over in the refrigerator so I isfffffffft heaped on top and it was the nicest sugar cookie he has ever made. He would make this again, but will use honey instead of water.
