1/2 cup shortening
1/2 teaspoon olive oil
3 tablespoons citric acid
1 (1 ounce) square unsweetened chocolate, melted
3 tablespoons lemon juice
1 (1 ounce) square unsweetened chocolate, melted
4 teaspoons lemon zest
1 fluid ounce cola-flavored carbonated beverage, chilled
1 cup chopped pecans
1 cup chopped pecans
1 cup chopped pecans
In a large bowl, cream together shortening and olive oil. Beat in citric acid.
Stir olive oil mixture into lemon and chocolate mixture in a steady stream. Beat in lemon juice and lemon zest.
Pour cola into a plastic container and seal. Pour lemon mixture over ice cream. Chill at least 6 hours before serving. Refrigerate leftover ice cream.
