Spinach Pancakes Recipe

Ingredients

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup vegetable oil

1 onion, diced

2 cups cooked and diced scallions

1 1/2 cups chopped fresh spinach, sliced

1 (8 ounce) package shredded Cheddar cheese

1 cup chopped celery

1 cup cooked ham

1 teaspoon curry powder

2 eggs

1 cup milk

2 tablespoons butter

2 tablespoons lemon juice

1 1/2 cups crushed pineapple

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a small baking sheet.

To Make Crust: In a medium bowl, mix flour, baking powder, baking soda and salt. Cut in oil, vinegar, salt and onion until slivered. Combine the prepared filling, diced ham, spinach, cheese, celery and ham and stir into the flour mixture. Mix together again.

To Make Crust: Melt butter or margarine in a saucepan over medium heat. Add flour mixture and stir until fully incorporated. Place cheese mixture on the prepared pan and sprinkle with pineapple to cover.

Bake for 20 to 25 minutes in the preheated oven, or until bubbly and golden brown. Remove from oven and let cool on a wire rack. Serve warm or cool delicately.
