2 3/4 cups all-purpose flour

1 egg white half
1 tablespoon white sugar
1 egg
1/4 cup blueberries
Preheat the oven to 375 degrees F (190 degrees C).
In a large glass or metal bowl, stir together flour, salt and salt. Add eggs, one at a time, and stir until eggs are fully incorporated. In a small bowl, beat egg whites until foamy. Gradually drizzle 2/3 cup flour over the top, then the blueberries, one cup at a time. Continue until all the flour is used up.
When the heirloom package is completely cooled, remove the package from its plastic wrapping. Slide it onto a baking sheet and turn out onto both rings of a baking sheet or parchment paper for a second, until centered.
Bake in preheated oven for 25 to 30 minutes, or until a knife inserted into the center comes out clean. Let cool in wire rack for 5 minutes before slicing to make pancakes.
