1/2 cup dried baking mix (all-purpose flour)
1/2 cup dried currants
1 cup cherries, pitted and sliced
1 cup graham cracker crumbs
3 tablespoons butter
1/4 cup white sugar
1/4 cup sour cream
1 1/2 cups stevia
1/2 cup instant coffee
1 1/2 tablespoons lemon zest
1 egg
Combine the dry baking mix, currants, cherries and graham cracker crumbs. In a large bowl, cream together the butter, sugars and sour cream. The mixture can be whipped or crumbled with a fork. Mix in the sour cream, using to 1/4 cup per cup of the cream. Beat in the eggs one at a time, then stir into the creamed mixture while you whisk in the remaining half cup butter, sugar and salt. After mixing in the dry batter, whip or spread teaspoonfuls on to each plastic serving plate. Serve up to two cups at a time.
