Blondies II Recipe

Ingredients

2 eggs

1/2 cup vegetable oil

1/2 cup white sugar

3/4 cup citrus juice

1 teaspoon lemon extract

1 teaspoon vanilla extract

1/2 lemon zest

1 cup all-purpose flour

1 quart milk

2 (10 ounce) cans lemon-lime flavored carbonated beverage

2 teaspoons vanilla extract

1 (5 ounce) can crushed pineapple

1 (10 ounce) can sliced pineapple with juice

2 cups granulated sugar

Directions

Beat eggs, oil, sugar, and citrus juice in large bowl until well blended. Mix citrus juice, lemon extract, lemon zest, flour, and milk into egg mixture. Fold lemon juice mixture into flour mixture; pour into 9-inch-square baking pan.

Bake in preheated oven until a toothpick inserted into center of cake comes out clean, about 35 minutes. Cool completely before cutting into cubes.

To make Crust: Melt margarine in a saucepan over medium heat. Add crumbs and vanilla, mix thoroughly. Pat into the prepared pan.

Using an electric mixer or by hand, combine brown sugar and lemon-lime soda. Beat gently until blended. Divide lemon-lime soda between two 3-quart or 9-inch-round baking pans. Pour lemon juice mixture over bottom of crust. Cover tightly with aluminum foil; refrigerate to chill. Cool completely before cutting into cubes; reserve 1/2 teaspoon remaining lemon juice for garnish.
