1 (32 ounce) can refried beans
1/2 pound medium shrimp, casings removed
1/2 cup mayonnaise
1 teaspoon minced red onion
1 teaspoon sprinkles
1/2 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon dried cilantro
1/2 cup salsa
Preheat oven to 350 degrees F (175 degrees C). Insert instant-read thermometer into chicken drumsticks. Press firmly into bottom of a 9x13 inch baking dish.
Heat oil in deep skillet over medium high heat.
Carefully dip 2 drumsticks into oil. Place drumsticks in boiling water to reduce. Remove drumsticks and drain on paper towels. Discard remaining batter.
Place drumsticks in hot oil pan with lid loosely closed. Pour in 2 teaspoons of mayonnaise. Spoon in juice from bean pods and oregano and sprinkle with chopped fresh basil. Spoon in salsa.
Bake at 350 degrees F (175 degrees C) for 45 minutes. Turn drumsticks over, and bake an additional 45 minutes for even cooking. Serve immediately.
