Zesty Eggs Benedict Recipe

Ingredients

1 tablespoon butter

1 pound eggs, beaten

3 tablespoons milk

2 cups shredded Swiss cheese

1 (10.75 ounce) can condensed tomato soup

1/3 cup white sugar for garnish

1/4 teaspoon paprika

Directions

Preheat oven to 375 degrees F (190 degrees C).

In a medium saucepan, cream eggs with milk, and place in the bottom of a 3 quart casserole dish. Mix egg yolks easily with a wooden spoon.

In a medium bowl, mix eggs, milk, cheese, tomato soup, sugar, and paprika. Mix well. Place in preheated oven.

Bake 60 minutes in the preheated oven, until eggs are set and cheese is bubbly.

I didn't think these were going to be enough for a family but they were a hit! Everyone loved them and everyone wanted to try them. I would recommend this recipe to anyone, great to be served as-is or covered in powdered sugar. Great taste.
