1/4 cup butter
1/2 cup lemon juice
1 cup milk
1/4 cup lemon zest
1/4 cup white sugar
1 teaspoon vanilla extract
1 teaspoon lemon zest
1 egg
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla extract
1 cup chopped peaches
1 cup chopped walnuts
1 cup margarine, softened
1 cup peanut butter
1 1/2 teaspoons lemon zest
1/2 cup chopped peaches
1 teaspoon grated lemon zest
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, sugar, lemon juice, milk, lemon zest, sugar and vanilla until smooth. Mix in the lemon zest and peach zest, and mix until well blended. Roll the butter mixture into 1-inch balls and place them 2 inches apart onto the cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
