1/2 cup peanut butter
1 tablespoon finely chopped onion and bell pepper
1 cup soy sauce
2 teaspoons white sugar
1 tablespoon curry powder
1 teaspoon grated lime zest
1 teaspoon salt
In a large bowl, mix peanut butter, onion and bell pepper. Work in rice, using metal picking to cut into thin pieces.
Separate the peanut butter mixture from the remaining ingredients, and set aside.
Melt remaining peanut butter in a small saucepan over medium heat. Mix in soy sauce, sugar, curry powder, lime zest, and salt. Bring to a slow simmer, stirring constantly. Serve immediately, stirring often, to prevent burning.
I didn't really think the salad dressing was sriracha, but it was pretty close and thought it sounded good. As it said, thinly sliced garlic would be helpful.
