1 cup chopped onion
1 (6 ounce) can pineapple chunks, drained
1 (8 ounce) can pineapple juice
1 (3.5 ounce) package instant vanilla pudding mix
1 cup diced celery
1 (8 ounce) can pineapple slices
1 (7 ounce) can sliced pineapple with juice
Bring a large pot of water to a boil. Add onion, and cook about 5 minutes, stirring frequently.
Stir pineapple chunks and pineapple juice into cooked onion. Return to a boil and cook about 3 minutes, stirring frequently. Add pudding and celery. Reduce heat to medium-low and simmer about 20 minutes.
Remove from heat and stir in pineapple slices. Serve over rice.
