1 cup vegetable oil
2 cups white sugar
1 cup shortening, melted
3 cups boiling water
2 eggs
1 teaspoon vanilla extract
1 (2 ounce) package fruit flavored Jell-O mix
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round pans.
In a large bowl, cream together the vegetable oil, sugar and shortening until smooth. Beat in the boiling water. Beat in the eggs one at a time, then stir in the vanilla and fruit gelatin mix. Pour batter into prepared pans.
Bake for 25 to 30 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely.
