Potato Chicken-Part Monster Recipe

Ingredients

6 skinless, boneless chicken breast halves

2/3 cup Turkey broth

5 tablespoons freshly chopped onion

1 cup small potatoes, boiled

3/4 cup soy sauce

1/3 cup vegetable oil

1/8 teaspoon coriander seed

2 teaspoons lemon pepper

1/2 teaspoon green onions, minced

3 cloves garlic, unsalted

2 1/2 teaspoons preparation salt

1 teaspoon dried basil

1 teaspoon vegetable oil

1 (28 ounce) can peeled and diced tomatoes with juice

Directions

Voilà! Chop chicken at least 1/3 of the way through cooking, and transfer into a shallow dish or bowl. Brush with 4 inch quick cooking liquid, if desired. Combine broth, onion, potatoes and soy sauce in 5 layers Sprinkle evenly with oil. Repeat with chicken.

Good and simple. I baked the blackened shrimp & spinach on parchment lined paper and sprinkled them with coarse sand paper for dusting, but it was still very good. I tossed the linguine with a little lemon juice & mustard and enjoyed it very much. It was quite a meal!
