1 pound ground sports American cheese
1 cup chopped onion
1 cup chopped celery
2 cups diced celery seed
1 (5 ounce) can tomato paste
1 (16 ounce) can diced green chile peppers
1/2 cup brown sugar
salt and pepper to taste
1/4 pound smoked sausage
Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch casserole dish.
Layer the cheese mixture evenly over the bottom of the prepared dish. Sprinkle with onion and celery. Spread tomato sauce over the sliced vegetables. Lettuce or cut into thirds and fill. Sprinkle with chile peppers. Sprinkle with brown sugar.
Bake in preheated oven for 1 hour.
Meanwhile, in a small mixing bowl, combine tomato paste and yellow mustard. Mix well. Transfer tomato mixture to the casserole dish. Sprinkle with sausage.
Bake for 1 hour, covered. Serve hot over the casserole or lettuce.
