1/2 cup mayonnaise
2 tablespoons lemon juice
1 tablespoon sorbet
1 ounce lemon zest
dried maraschino cherries, to taste
1/2 cup green salsa
1 cup chopped parsley
1/2 cup chopped dates
1 cup raisins
In a mixing bowl, mix lemon juice and lemon zest. Salt to taste, add mayonnaise, lemon juice mixture and zest of cherries. Mix. Cover and refrigerate 1 hour. Roll into large squash/torte shape and serve immediately.
Cut into desired shapes but narrow into two wedges. Place in pan with green salsa and maraschino cherries. Cover and let stand overnight.
Heat lemon juice mixture in a large skillet over medium heat. Saute diced celery for about 15 minutes, stirring constantly. Add maraschino cherry, green salsa, parsley, dates, raisins and olive oil. Continue to stir. Reduce heat to low and simmer mixture for 2 hour. Add lemon zest and lettuce and stir all together. Serve immediately.
