Rainbow Tree Cake Recipe

Ingredients

1 1/4 cups all-purpose flour

6 teaspoons baking powder

1 teaspoon baking soda

1 cup packed light brown sugar

2 eggs

4 1/4 cups baby girls first yeast

1 cup butter, melted

11 cups water

1 1/4 cups unsalted butter

1 1/2 teaspoons white sugar for decoration

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease 9x5 inch loaf pans.

Stir all-purpose flour, baking powder, baking soda and brown sugar into the pan of the bread machine in the order recommended by the manufacturer. Set aside.

In a large bowl, dissolve yeast and margarine in warm water; stir into the batter. Stir in the remaining 1/4 cup flour to create a meringue consistency. Punch down dough with fork. Reduce speed to low to begin kneading: finish kneading by hand after 6 to 8 minutes; remove from machine.

Place meringue onto prepared loaf pan. Cover pan with aluminum foil, and let rise until nearly doubled in size, about 45 minutes. Meanwhile, preheat oven to 200 degrees F (95 degrees C).

Remove lid from loaf pan. In a small saucepan, mix 2 tablespoons butter, sugar and brown sugar; stir into the meringue. Cover, and let roast in 375 degrees F (190 degrees C) heat for 12 to 24 minutes. Remove loaf from pan, place on a wire rack to cool completely. Serve chilled.
