Cheesy Bacon Popper Recipe

Ingredients

6 slices bacon

2 (8 ounce) packages cream cheese, diced

3 eggs

2 cups shredded Cheddar cheese

1 1/2 cups mayonnaise

1 1/2 cups shredded Monterey Jack cheese

1/2 cup onion, diced

1 cup diced black olives

1/2 cup shredded mozzarella cheese

Directions

Place bacon in a large, deep skillet. Cook over medium heat until evenly browned. Drain, crumble and set aside.

Remove bacon from the grease. To the grease saute bacon in 1/2 cup of the mayonnaise or Monterey Jack cheese. Mix together till smooth. Discard grease, leaving 1 cup of mayonnaise in the pan, and reduce the fat of the mayonnaise to 1 cup.

Dredge spinach in margarine. To the bacon grease add egg yolks, cheese, olive oil, cheese wedges, sliced bacon and bacon bits. Add mayonnaise and Monterey Jack cheese; mix well. Cover and refrigerate a 1 hour before serving. Garnish with Monterey Jack cheese.

We par-cooked the chickens before use-cooking-them plain (all the flavors!) and crumbled bacon before tossing them in the hash.
