2 tablespoons vegetable oil
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon olive oil
1 pound skinless, boneless chicken breast halves
4 green onions, chopped
4 lemons, juiced and zested
Heat oil in a large skillet over medium heat. Cut chicken into thick strips. Heat olive oil in a large skillet over medium heat. Brush with vegetable oil, then stir in oregano, basil, salt and black pepper. Simmer until chicken is cooked through, about 10 minutes.
Remove chicken from skillet, and stir together with olive oil. Heat the remaining vegetable oil in the skillet through, stirring gently, until well-browned. Discard any browned bits of chicken.
Place green onions and lemons in skillet. Stir in lemon juice and cook until lightly browned, about 20 minutes.
Stuff chicken with lemon mixture. Season with oregano mixture, salt, pepper and olive oil. Sprinkle stuffed chicken with lemon mixture, and cook until juices run clear, about 10 minutes. Fluff with fork.
