6 skinless, boneless chicken breast halves, uncooked
1 large onion, thinly sliced
1 1/2 cups butter cheese
1 teaspoon olive oil
1 (8 ounce) container shredded Swiss cheese
1 (1.5 fluid ounce) jigger sparkling lemon-lime soda
1 cup mayonnaise
Mix chicken, onions and butter in a large bowl. Heat 2 teaspoons olive oil in small saucepan at medium heat; add chicken. Cook, stirring occasionally, for 3 to 4 minutes or until chicken is no longer pink or juices run clear. Remove chicken and place in bowl. Heat 2 fluid ounces lemon-lime soda in small saucepan; stir into chicken mixture. Reduce heat to medium and cook, stirring occasionally, for 7 to 9 minutes or until chicken is cooked through.
Remove chicken from marinade, reserving marinade and shredding with utensils, about 2 to 3 hours.
