1 (12 ounce) package romaine lettuce, rinsed and dried
1/2 small onion, seeded and thinly sliced
1 cup chopped celery
1 cup chopped green bell pepper
1/4 cup chopped red bell pepper
1 cup chopped green bell pepper
1 cup sliced fresh strawberries
2 (16 ounce) cans frozen lemonade concentrate
1 (8 ounce) can fruit preserves
Lay lettuce rolls in a large bowl. Pour in water, onion, celery and bell pepper. Toss to coat. Cover and refrigerate at least 4 hours.
Preheat oven to 350 degrees F (175 degrees C).
Roll rectangles in the flour, reserving 1/4 cup of the flour for rolling, and place in a shallow baking dish.
In a blender or food processor, combine lemonade concentrate, preserves and fruit. Pour mixture over lettuce, and sprinkle with remaining flour. Roll up and serve.
