1 cup white sugar
1/3 teaspoon salt
1 teaspoon vanilla extract
3/4 cup packed light brown sugar
4 eggs
1 teaspoon vanilla extract
2 1/2 cups coarse crumbled cornflake cheese
1 cup cooked, cubed potato
Preheat oven to 350 degrees F (175 degrees C). Grease 12 8 inch round baking pans.
In a large bowl, combine whole corn, compactly, salt, and vanilla. Stir until well blended. Gradually mix in brown sugar, eggs, vanilla and brown sugar; whisking constantly. Pour into prepared pan.
Bake in preheated oven for 50 minutes, or until a toothpick inserted into center of the pie comes out clean. Remove from oven, and allow to cool completely. Pour cheese over crust.
While serving, combine potato with brown sugar, and cook over a small flame for 10 minutes, or until tender. Mix with cheese mixture. Top with cornflake topping. Bake in preheated oven for 30 to 40 minutes, or until cheese well coats the crust. Immediately remove pan from oven, and cool completely. Chill until serving.
