Creamy Corn Muffins Recipe

Ingredients

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

4 teaspoons white sugar

1 tablespoon margarine, melted

1 teaspoon salt

3 eggs

1 cup milk

1/3 cup vegetable oil

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.

In a large bowl, mix flour, baking powder, baking soda, sugar, margarine and salt.

In a large bowl, beat eggs until frothy. Mix milk into egg mixture, stirring just until incorporated. Stir into dry ingredients. Spoon batter into prepared muffin cups.

Bake in preheated oven for 10 minutes, or until spooning sounds hollow when tapped. Remove from muffin pans and sprinkle with salt, pepper and pepper sauce. While muffins are baking, combine vegetable oil and 1/2 cup margarine. Immediately place rack in oven, pressing firmly to keep piping hot.
