2 bananas, peeled and slice
shortening for frying
1/2 cup chopped onion
1/2 cup chopped celery
1 teaspoon lemon juice
3 tablespoons rum
9 slices Swiss cheese
Place chopped bananas in a medium saucepan and cover, over simmering water. Whisk in shortening until hot and stirring occasionally. Remove from heat; drain and set aside.
Heat the lemon juice and fresh lime juice in a small saucepan, and mix together. Mix until smooth, and set aside to cool.
To prepare the toast, crumble the cheese and rank pork sausage in a mixing bowl. Place on french toast. Reserve the hot skillet.
Preheat grill for high heat (this will prevent smoking). Grill sandwiches about 10 minutes on the prepared grill, until grill is heated.
