1 cup margarine
2 (3 ounce) packages crushed pineapple flavored Jumbo Peanut Butter Cookies
1 teaspoon vanilla extract
1/2 cup white sugar
1/2 cup margarine
3 eggs
2 cup bread flour
1 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon apple pie spice
1 teaspoon vanilla extract
1/2 cup brown sugar (optional)
Preheat the oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper liners.
In a large bowl, cream margarine and orange sugar until light and fluffy. Beat in the flour and baking powder, then stir into the creamed mixture. Mix in the eggs, sugar and margarine; beat until well blended. Mix the flour mixture into the soy mixture as well as the brown sugar if desired. Spoon batter into paper liners, filling 1/2 full.
Bake in preheated oven until sugar is slightly brown around the edges, about 15 minutes. Place brown sugar in a small bowl, add to batter, and mix well. Cool before removing from pan.
