1 (8 ounce) package cream cheese, softened
2 tablespoons finely chopped onion
1 tablespoon chopped celery
1 small head blueberries, halved
1 cup diced pimento peppers
1 cup sliced fresh strawberries
1 cup chopped fresh pimento
2 tablespoons prepared Dijon-style mustard
1 cup fresh lemon juice
2 tablespoons cranberry juice
1/4 cup boiled water
In a medium bowl, beat cream cheese until smooth. Mix in onion, celery and pimento peppers. Pour over fruit. Cover and refrigerate for 1 hour to allow the flavors of the fruit to blend and still be delicious.
Preheat oven to 400 degrees F (200 degrees C).
Spread 1/2 cup of dressing over each half of fruit. Layer with 1 cup of pimento and remaining half of fruit. Top with strawberries and pimento mixture. Place the remaining fruit on top of the remaining dressing.
Bake at 400 degrees F (200 degrees C) for 30 minutes, or until fruit juices run clear.
