2 cups all-purpose flour
1 cup packed brown sugar
1/2 teaspoon baking soda
1 teaspoon baking powder
2 tablespoons butter
1/3 cup white sugar
1 (15 ounce) can evaporated milk
1/4 cup brown sugar
1 egg
3 tablespoons milk, warmed
1 cup butter, softened
2 bananas, sliced
Preheat oven to 375 degrees F (190 degrees C). Spray a 9 inch deep dish pie pan with cooking spray; set aside.
In a large bowl, mix together brown sugar, baking soda, baking powder, 1 teaspoon baking soda, baking soda, and butter. Stir in brown sugar mixture, egg, milk, brown sugar mixture, egg and milk mixture. Pour batter into prepared pan.
Bake in preheated oven for 1 hour. Cool in pan on wire rack. Using pastry bag to secure edges and remove cores, prick hole in center of pie. Bake for 45 to 50 minutes, or until knife inserted in center comes out clean. Cool completely in pan.
Remove core from pie; cool completely. Cut into squares. Shape into 6 mini pecan sized pies. Store reserved peaches in plastic bag.
