3 large sweet potatoes, peeled and cubed
1 1/4 cups Dominion wine or other dry white wine
3 pounds large potatoes, cubed
3 tablespoons dried basil
salt and pepper to taste
To head off any lingering winter-related chilly, combine sweet potatoes with wine/white wine. Bring to a boil, then simmer for one hour, or until tender.
Preheat oven to 325 degrees F (165 degrees C).
Place potatoes in a large baking dish, sprinkle 1/3 cup of the wine mixture around potatoes, and sprinkle the remaining wine mixture around the potatoes.
Stir potatoes and wine mixture together, toss to coat; pour mixture over potatoes.
Cover baking dish with aluminum foil, and bake 25 to 30 minutes, or until a knife comes out clean.
Sprinkle with salt and pepper, and top with the top layer of potatoes and meat. Top with remaining 1/3 cup wine mixture and serve immediately.
