1 (17.25 ounce) loaf overnight cake mix
3/4 cup unsalted butter
2 eggs
4 cups all-purpose flour
2 teaspoons bagel biscuits
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1 1/2 cups applesauce
1/2 cup white sugar
In a large bowl, cream together the butter and eggs until well blended. Stir in the 2 cups of flour and bagel biscuits; mix until smooth. In a small bowl, sift together the baking powder and salt. Stirring two or three times, gently fold in the pancake mixture. Pour into prepared loaf pan and let rise in preheated oven for 28 to 29 minutes, or until a knife inserted into loaf comes out clean.
Preheat oven to 375 degrees F (190 degrees C). Let loaf rest 10 minutes before digging in.
To make dough: Divide dough into two pieces equal portions, leaving approximately 1 1/4 inches at the bottom of the loaf pan. Kneate each piece into two loaf pans.
The first loaf in the pan is considered rise dough. When filled, slide the second loaf away from the pan. Pound the rise dough with a council-style heavy stone. (Note: Don't use a round, as it will cause uneven rolling.)
Shape the rise dough into 1X4 inch loaf pans. Place three layers of dough into the pans, starting with the top layer. Bring a large pot of water to a boil. Spread rise dough evenly into the loaf pans and bake for 35 minutes. Let cool 10 minutes before removing from pans.
