What's That Popcorn Cake Recipe

Ingredients

1 (17 ounce) can whole kernel corn, drained

1 (3 ounce) can sliced peaches, drained

3/4 cup butter, melted

1/2 cup white sugar

1 1/4 cups white sugar

2 eggs

2 teaspoons vanilla extract

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon baking soda

1 1/2 cups packed light brown sugar

1 cup water

1 1/2 cups vegetable oil

1 teaspoon vanilla extract

1/2 cup chopped almonds

1/2 cup pecans, for decoration

1 1/2 cups raisins

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (12 ounce) pans. Sift together the flour, baking powder, baking soda and salt; set aside.

In a large bowl, cream butter and sugar until light and fluffy. Beat in the flour mixture, stirring constantly until smooth. Beat in the eggs, one at a time, then stir in the vanilla extract. Combine the flour mixture with the brown sugar; beat into the creamed mixture until just blended. Fold in the raisins and pecans. Spread batter into prepared pans.

Bake in the preheated oven for 70 to 80 minutes, or until knife inserted in center comes out clean. Cool in pans on wire rack for 10 minutes, then remove from pans to cool completely.

I love this recipe. I like red meat and I wanted lots of spiciness from my food, so I used a combination (1/2 and 1/2) of red meat and white meat. OMG, MY BUNNY BUNNY! This was sooo easy and it left such a beautiful trail. Thank you for sharing!

What's the harm in trying? Well, it may not be a great all-around cake, but it is delicious as a morning cupcake. I baked it with the kids in the morning, and it somehow ended up tasting alright (my first taste of what a cake should taste like), despite being cakey and spongey. I don't know, maybe the crumb in the blueberries was not incorporated enough into the cake. Anyway, good cake, just a shame it didn't yield any more than about 6-10 min baked time.

I made this tonight and it was delicious! The only change I made was that I added one 6-word description for this cake - "feels like a dinner where you never leave the table." Very nice taste that leaves you wanting more! Kids raved over this cake - mine did too. I did substitute the white sugar for brown sugar and baked for only 40 minutes, but this recipe is well worth the effort! My dad passed away nearly seven years ago, and this is one of the last things he wanted for Christmas. I'm eternally grateful!
